Zucchini and Cauliflower Soup Recipe

Ingredients
1 brown onion
1 ½ zucchini
2 cups cauliflower cut into pieces
500ml water
2 tablespoons vegetable stock
pinch ground black pepper
15ml Extra virgin Olive Oil

Optional: 600g raw Chicken breast

Preparation

Finely chop onion and garlic
Chop zucchini
Add zucchini and cauliflower to onion mix
Add water and stock, pepper
Bring to boil and simmer for 15 minutes
Blend all ingredients
Add olive oil and blend for 3 secs
Steam or grill chicken first, then cut into thin slices (or shredded) and add to soup.
